Pork Liver & Onion Pate
- 5 kg pork bellies, preferably with the skin
- 1.4 kg liver
- 10 tbsp salt (might need more)
- 2 tbsp ground black pepper
- 1.6 kg onions
Sautee onions until caramelized, in the meantime cook pork bellies and liver thoroughly. Let them cool, then grind pork bellies, liver and onions together. Season. Fill into sausage casing, cold smoke (not necessary).
