What does Field & Forest to Table Meats mean?
Field & Forest to Table Meats is our tasty wild game and farm stock spin on the farm-to-table movement. By shortening the gap between the hunt and the first bite, we’re reconnecting people with their culinary roots. As a private consumption butcher, Little Butcher Shop places a focus on quality over quantity, flavor over fluff, and satisfaction over speed.
What kind of animals do you butcher?
Whether it walks, runs, crawls, or prances, we can butcher it! As long as it’s legal to hunt or raise on a ranch, we’ve got the equipment and expertise to get the highest-quality meat out of any animal. We do prioritize some animals during the height of hunting season over domestic animals due to our capacity limitations.
Would you teach me how to butcher an animal?
Absolutely! At Little Butcher Shop, we’re dedicated to preserving the lost art of butchering. But, that doesn’t mean we’re keeping it for ourselves. We’re more than happy to take the time to show hunters, farmers, and other customers how to butcher your animal effectively, sustainably, and safely. Over the past 30 years, we’ve gained with experience butchering techniques that result in the highest-quality cuts of meat no matter the animal. Our philosophy is you butcher your animal the way you are going to serve it at your dinner table.
How long does it take to have an animal butchered?
It varies based on a variety of factors including the type of animal and the requested cuts. Generally, we’re able to turn out custom cuts of meat for clients within a few weeks of receiving the animal. Keep in mind that our focus is quality over quantity. As a boutique provider of finely aged meats, we take the time necessary to produce personalized cuts with true flavor. This hands-on process might take a little bit more time than meat produced for mass consumption, but the real difference lies in the flavor and tenderness. So, it’s a difference you can taste!
How much do you charge for butchering?
We take a custom-tailored approach to butchering which means everyone receives a unique price based on their specific needs, so it’s not possible to give a single price. Unlike many butchers, Little Butcher Shop gives prices based on hanging weight as opposed to farm weight. That means you’re only paying for what you can actually use. The guts, hooves, head, and other “throw-away” parts aren’t factored into the price.
What cuts of meat do you offer?
Anything and everything! If you crave it, we can deliver it. Seriously! Whether you want venison saddles, elk tenderloins, bear chucks, or any other kind of cut, we’ve got you covered. We focus on private vs mass consumption which means the butchering process is catered to your unique tastes and preferences. That’s all there is to it!
How long do you age meats?
We age meats at various lengths depending on the type of animal and the preferences of each customer. On average, Little Butcher Shop meats are hung up for a few weeks which allows the true flavors to come out. To give you an idea of what that means, the meats you buy at the store are usually only aged for a week which is why they’re usually lacking in flavor.
Do you offer to pick up the animal?
Sure! If you don’t have the time, means, or desire to bring the animal over to the Little Butcher Shop, we can come pick it up. We’ll do our best to accommodate your schedule by finding a date and time that works best for you. If you think that’s convenient, you can even get the final cuts delivered directly to your house too!
What kind of safety measures do you have in place?
We have extensive safety protocols in place to ensure the final cuts are perfectly safe to eat with sufficient preparation of course! We won’t bore you with the details, but Little Butcher Shop uses a Hazard Analysis Critical Control Points (HACCP) strategy to optimize food safety so our clients always get the absolute best.
Do you offer custom orders?
At Little Butcher Shop, every order is a custom order! As boutique butchers, we only handle one animal at a time.
